I never go over 500M ram unless I’m running Windows in a Virtual Machine. Right now with Firefox, Open Office and Evolution open and being used I’m eating 438.3M RAM. And, as Simon said, Ubuntu is the “heavy” version.

There are also other versions of ubuntu, if you wiki ubuntu there you will find different versions, personally i like xubuntu since it uses less resources for my crappy computer.
